Mexican Seasoned Black Beans "Los Generosos"

These beans are perfectly seasoned with lots of different chilies, onion and garlic.  The poblano and manzano peppers as well as the fresh epazote give these beans a great depth of flavor.  It is a staple in our home! 

Ingredients:  Black beans, onions, poblano peppers, manzano peppers, green tomatillos, jalapeño pepper, garlic, cilantro, epazote, salt.

These beans are perfect as a side to huevos rancheros and chilaquiles.  You can also mix in the blender with some water or broth to make a delicious and creamy black bean soup.  They are so creamy that you would think there is dairy in them, but they are vegan.
